How about a little twist to an old favorite, Ugly Bread. I’m really not sure why it’s referred to as ugly, but it sure is tasty. Ugly bread has taken on many flavors but for this recipe it’s taking on a taco flavor. If you love tacos and Enchiladas you will love this.
Enchilada Ugly Bread
1 pound ground turkey
2 rolls of biscuits
1 cup salsa
1 cup of enchilada sauce
1 taco seasoning packet
1 cup cheddar cheese
1 cup diced onion
sour cream (optional)
Brown ground turkey, taco seasoning, and onions in a skillet. Drain turkey if needed and then add salsa and enchilada sauce. Set aside. Cut biscuits into fourths and place in a large bowl. Pour turkey mixture into the bowl of biscuits. Mix just to cover the biscuits. Do not over mix. Add mixture to a greased baking dish. Bake in a 350-degree oven for 30 min.Top Ugly Bread with shredded cheddar cheese and bake additional 10 min to melt cheese. Let set 5 min and serve. Yum!
