How about an old favorite with a new twist. I created a new Zesty Chicken Salad for dinner. It was a hit. It’s simple to make and can be whipped up fairly quickly for a last minute meal. It’s one of my favorite chicken salad recipes because it’s packed with flavor! Go ahead, give it a try, you’ll love it.
Chicken salad with a kick!
Zesty Chicken Salad
1 1/2 pounds of chicken breasts
1/4 cup diced onions
4 oz drained diced chilies
8 oz sour cream
3/4 cup shredded cheddar cheese
dash salt
dash black pepper
20 slices of Texas toast
butter
Precook chicken in a skillet. After chicken is fully cooked, cut the chicken into bite-size pieces and place into a bowl. Add onions, chilies, sour cream, cheddar cheese, salt and pepper to the chicken. Butter 2 slices of bread on one side of the toast. Place 1 slice buttered side down onto a heated griddle or skillet. Add 1 scoop of the chicken salad and then top with the other slice of Texas toast buttered side facing upward. Continue with the remaining chicken salad and toast. Grill sandwiches using your indoor grill till a light golden brown and the cheese has melted. Serve immediately! Yum!
