Margarita Poke Cake

My family loves poke cake.  It combines a wonderful moist white cake and any flavor of jello you wish to use.  Well how about combining poke cake and tequila?  Oh yes, that’s like combining jello shots and cake.  Why not? Think of the possibilities… For instance, you could turn your favorite drinks into a dessert that include  Margaritas, Dacharis, Mudslides, and Grasshoppers.  Oh, and how about Pina Coladas and Sex on the Beach. That’s what I’m thinking too. Use the recipe below to help turn your favorite drink into a yummy dessert.

For this cake, I used two 6in cake pans instead of just one large cake pan.  I wanted to end up with both a Strawberry Margarita and a Lime Margarita cake.  I have also created this cake in just a regular cake pan and split the flavors on each end.  It is really up to you. The regular cake was easier because the whip cream topping stays on top better.  So neatness does count!

1 white cake mix

1 package of strawberry/lime jello

1 cup of Tequilla

1  package of whip cream

Bake the white cake according to directions on the box. Set aside to cool. After the cake is completely cooled, poke holes into the cake with the handle of a mixing spoon. Boil 1 cup of water and add to the jello of your choice. After stirring and the jello has dissolved add 1/2 cup of tequila. Then spoon the jello over the holes in the cake. Place cake into the refrigerator to cool for about 30 min. or so. Remove cake from refrigerator and add whip cream to the top of the cake. Serve or refrigerate! Yum!
