Hello! Today I am sharing with you one of my favorite soups. A few years ago I was featured in our local newspaper with a few of my favorite recipes and this was one of them. My husband and I love one of Campbell’s Soup. Well I decided to create my own home version. I think it turned out wonderful and now I just make it at home for my family. If you try it, I would love to know how it turned out.
Pizza Soup
1 pound tri-colored pasta
1 pound bulk sausage
8 oz sliced pepperoni
1/2 cup diced onion
8 oz button mushrooms
14 oz pizza sauce
8 cups of water
3 tsp Italian seasonings
8 beef bullion cubes
shredded mozzarella cheese
In a large pan brown sausage and onions. After sausage is cooked cut pepperoni and mushrooms into quarter cut pieces and add to sausage. Add your favorite pizza sauce, water, Italian spices and bullion cubes. Bring to a boil then lower temperature to a simmer. In a separate pan cook pasta as you normally would. But do not cook pasta all the way. You just want the pasta to start the cooking process. Drain pasta and add to soup. Let simmer for about 20 min. Serve and top with shredded mozzarella cheese. Yum!
