Hello!Today I am going to share with you another old favorite, stuffed meatloaf. I personally prefer to use ground turkey instead of ground beef. I feel ground beef makes this meatloaf overly greasy. Plus using turkey instead of beef is better health wise.
Stuffed Meatloaf
2 pounds ground turkey
1 sleeve of crackers
1/4 cup ketchup
1/4 cup BBQ sauce
1 Tbs mustard
1 tsp black pepper
1 med diced onion
2 eggs
2 cups shredded cheddar cheese
1 # cooked chopped bacon
In a bowl combine ground turkey, crumbled crackers, ketchup, BBQ Sauce, mustard, pepper, onions, and eggs. Mix well. Place a large piece of foil, freezer paper, or Saran wrap on the table. This will help you roll the meatloaf. I prefer freezer paper. Place meatloaf mixture onto paper and spread out like you would pizza dough. Sprinkle the spread out meatloaf with shredded cheese. In the middle section sprinkle the crumbled bacon. Then using the paper to help you roll, fold the sides over the middle section. After your meatloaf roll is folded, flip onto a cooking sheet. Fold under both ends to secure the stuffed meatloaf. Place in a preheated 350-degree oven for about 40 min.
After it is finished baking, I like to add additional ketchup on top and then return to oven for about another 10 min.
Don’t forget, your stuffed meatloaf can also be cooked using your home grill to get better taste and flavor from the meatloaf.
