Grandma Smith’s Pumpkin Chocolate Chip Cookies 36 cookies
1 cup shortening
1 cup sugar
1 cup pumpkin puree
1 egg
1 tsp vanilla
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 bag chocolate chips
In a large bowl mix shortening, sugar and eggs together using a mixer. Add pumpkin and vanilla and mix till combined. Add remaining dry ingredients to form a dough. Lightly fold in chocolate chips. Chill for at least an hour. Using a spoon, drop 1 Tablespoon size of cookie dough onto a cookie sheet leaving enough room between the cookies for a slight expansion. Place cookie sheet in 350-degree oven for 10-12 min.
