Mmm, I love egg rolls. Egg rolls are easy to make at home by using a few store bought items to make the process even easier.
Search your local grocery store for egg roll wraps, bean sprouts and Coleslaw mix. Yes, Coleslaw mix. You know the already shredded cabbage and carrot mixture in the produce section of the store. By buying a bag of the mix you cut out the prep process and the purchase of cabbage and carrots. No more sliced knuckles or fingers. Just grab a bag and the work is done.
To make pork egg rolls, brown and drain the sausage in a skillet. Add the sausage to the Coleslaw mix and add the bean sprouts. Don’t forget to add a few spices to the mix. You are now ready to roll. Change things up by adding shrimp in place of the sausage or other vegetables for a vegetarian egg roll.After rolling the egg rolls (instructions below), fry egg rolls slightly and allow them to drain a bit on a tray or rack covered with a paper towel. I find it beneficial to finish the cooking process in the oven. This allows for some of the grease to escape from the egg rolls. Who wants grease dripping down their chin anyways, yuck.
