I recently invited family members to my home for a homemade pizza night to try out a new pizza crust, zucchini style. Some were more adventurous than others and tried the new homemade pizza dough. For the ones not feeling as adventurous, I baked off some traditional pizza dough topped with the same favorite ingredients.
I first started with fresh zucchini from my parent’s garden.
The zucchini was grated and heated up in the microwave. After the zucchini had a chance to cool down, I strained away the liquid and squeezed the zucchini to remove as much liquid possible.
After removing liquid, I added the remaining ingredients and gently spread the dough onto a lightly greased baking sheet to bake.
After 15-20 minutes, the zucchini crust was ready to top.
After a short time in the oven, the pizza was ready for the hungry crowd.
It was fabulous! So yummy and better for you than regular pizza crust.
It was a beautiful night for pizza on the deck with family.
Next time, I plan on making 1 1/2 times the recipe to create two large thin crust pizzas. Hmm, sounds like another pizza party out on the deck is in order.

Zucchini Pizza Crust
8 cups of fresh shredded zucchini
1 cup of shredded parmesan cheese
1 1/2 cups of flour
1 tsp basil
2 eggs
1/2 tsp salt
1/2 tsp pepper
Preheat oven at 450 degrees.
Shred fresh zucchini. Place zucchini in a microwaveable bowl and place in microwave for 6 minutes. Remove from microwave and allow to cool.
Drain excess zucchini and squeeze zucchini to remove excess liquid. If you skip this step your dough will be too wet.
After removing excess liquid mix in the remaining ingredients.
Lightly grease baking to prevent sticking.
Gently press zucchini dough to cover baking sheet to the desired thickness.
Place in oven and cook for 15 minutes in a 425-degree oven.
Remove from oven and top with your favorite pizza sauce and toppings. Return pizza to oven to for 10 min. to heat toppings and melt cheese. Enjoy!
